Dungeness Crab Stuffed Chicken Breast Recipe

Ingredients:
2 lbs boneless, skinless chicken breasts
olive oil
salt and pepper
paprika
parsley, chopped

Stuffing:
1 lb Crab Meat
1 ½ cups fresh chopped spinach
½ cup grated Parmesan cheese
½ cup grated Cheddar cheese
½ cup soft cream cheese
juice from 1 lemon
½ cup chopped scallions

optional: Add some cayenne pepper dusted in for a little heat.

Directions:
Prepare and layout your ingredients for easy cooking.
1. Prep your chicken and cut a slit along the side of each chicken breast to create an opening.
2. Rub each portion of chicken breast with oil and season with salt,and pepper.
3. Sprinkle the top of each chicken breast with paprika, parsley and cayenne (if desired).
4. Combine all of your stuffing ingredients until well blended.
5. Stuff each chicken breast with the stuffing, (use toothpicks to close opening if necessary).
5. Preheat your oven and bake at 400ºF. Keep your cooking vessel covered for 25 minutes, then uncover and broil for 6 - 8 minutes until the top of the chicken is slightly brown.
